We have selected the peel of the best yuzu in Japan grown in Kochi prefecture. The peel is put in granulated sugar and left to macerate gently and then cooked for a long time at a low temperature so as to retain all its freshness and fragrance. It is then cut into 4 to 5 cm long strips. Without additives, colour or preservative, vacuum packed and flash pasteurised so as to ensure optimum storage without oxidation. The result is surprising and the final product is taste and flavour rich, top quality.
It is perfect to make orangettes and other sarments and to accompany pastries, mousses, bavarois and other sweet or savoury culinary preparations.
