If pasta have a King, it would have been spaghetti ! Martelli spaghetti is made in the village of Lari, close to Pisa, and is produced on a small scale based on traditional recipes. You may cook it "al dente" to enjoy a slightly crispy texture as the Italians love it.
The best recipe is the easiest to prepare: gently fry sliced garlic in some extra virgin olive oil and add it to your cooked Martelli spaghetti. Serve hot with some freshly grated parmesan.
