Salers is the dairy version of Cantal. It owes its taste both to the quality of Cantal pastures and to its slow maturing process that lasts at least 3 months.

Origin : Salers is a cheese typical of the high Cantal mountains. It obtained an "AOP" label which garantees its genuine making process and its constant quality. This label also rewards the constant efforts of the about 100 farmers that produce this cheese.

Wine(s) : fruited red wines (Costières du Gard, Sancerre).
