La Chaiseronne is one of Normandy's most celebrated butchers, whose recipes respect the traditions of the region as well as the origins of their ingredients.


This dish, made with tripe cooked in Calvados, originates from Caen and is based on a recipe that dates to the Middle Ages. We suggest that you serve it with steamed potatoes and a glass of Normandy cider.
