Guinea fowl terrine with hypocras and ginger - Hardouin
An exceptional terrine imagined for the 500th anniversary of the death of Leonardo da Vinci, working with the flavours of the time: ginger, guinea fowl and hypocras!
The Hardouin house
It is in Vouvray, near Tours, that the Hardouin house has been located for more than a century. The spirit of this traditional charcuterie is preserved today and allows it to offer high quality products made according to traditional methods.
The guinea fowl terrine with hypocras and ginger
This recipe was developed to celebrate the 500th anniversary of the death of Leonardo da Vinci, who ended his life in Touraine, the headquarters of the Maison Hardouin, and more precisely in Amboise, where today in the Clos Lucay there is a museum entirely dedicated to this genius.
Imagined around the ingredients much used at the time of this illustrious character, this rather lean terrine is delicately seasoned with ginger. The Hypocras jelly, an old wine and honey-based drink, sweetened and flavoured with spices, brings a touch of surprise in the mouth!
Recommended wine to accompany it: dry or semi-dry Vouvray!
