Original and utterly delicious, this preserve is fabulous as a spread or with pan fried foie gras
This gorgeous lentil preserve is made by a cooperative of lentil growers at Saint Flour. The lentil used to produce the preserve is unique to this area, thriving on the volcanic soil at 1000m above sea level.
The preserve can be used exactly as you would use a jam - spread on bread for breakfast, or stirred into yoghurt. For a sensational starter or light lunch, pan fry slices of foie gras, then add some of the lentil preserve to the pan with a splash of balsamic vinegar and a little chicken stock.
