Generous and tasty, this soft cheese with a bloomy rind is made from raw sheep's milk on the Méjean Causse, one of the Grands Causses. It is the very first cheese from the Hyelzas cheese dairy! It is based on the ancestral manufacturing principle of the Pérail, of which it is a very close cousin.
Its ivory-coloured rind is covered with a white down, and hides a white to ivory paste, fine and soft. Once in the mouth, this cheese mixes the finesse of sheep's milk with the aromas of undergrowth.
Its name comes from the Occitan word Fède, which simply means sheep!
This cheese benefits from the appellation "Produit de Montagne" because of the origin of the milk used, which comes from farms practicing sustainable agriculture and extensive breeding, and the establishment of the dairy at high altitude.
