Cantal is an uncooked pressed cheese made from cow's milk, typical of the Massif Central. Made from raw milk, this fourme benefits from an AOC, in reference to its area of production, the Monts du Cantal, in the heart of the Haute Auvergne. The water and grass are rich there, and this can be felt in this cheese with a strong flavour.

Ripened between 90 and 210 days (ripening between young and old) in large 40 kilo ants, it develops a texture and expresses all the flavour of its territory.

Under the golden-coloured buttoned rind lies a melting, meshed paste. Once in the mouth, this Cantal between two is fruity, with notes of hazelnut and fermented cream.
