The Passe-crassane is a variety of autumn pear, resulting from a cross with quince. This variety is one of the last to be harvested in autumn. It has almost disappeared from the soil because it is too sensitive to certain diseases (fire blight). Like Williams for the summer varieties, it is the most aromatic of the autumn pears. Both share the tradition of having the bud of the stalk covered with a touch of red wax.
The flesh is fine, melting, pleasantly acidic and very melting, very juicy. It gives this juice a milky, fluid but slightly velvety texture. Not to mention the aromatic power that blends all the freshness of the fruit and a beautiful persistence in the mouth.
Best served at 12°C in a stemmed glass.
It is excellent to accompany almonds, from brunch to cocktails, through tea time or afterwork.
