This honey, straw-yellow in colour tending towards orange, has not very pronounced aromas and a very smooth texture. It is perfect for sweetening without giving too much taste.
It keeps very well but, as it is monofloral, it tends to crystallize quite quickly.
Paul Luttge, 32 years old, grew up in the countryside a few kilometres from the Cistercian abbey of Saint-Hilaire, nestled in the Lauquet valley a few kilometres from Carcassonne (Aude). Paul started beekeeping in 2009 after completing his studies. He breeds his own queens and has built a honey house with a cold extraction chain. He works with his wife Jacinthe and his two young children.
Paul practices transhumant beekeeping. Depending on the time of the year, and the flowering season, the hives will stay between Corbières, Ariège, Montagne Noire and even the foothills of the Pyrenees.
