Small and red beans of Asia.

The Azuki bean or "bean of Japan" is a plant widely grown in East Asia for its edible seeds. This is one species of red beans the most delicious and most consumed both in Asian cuisine and pastry. The most common varieties in the North-East Asia have uniformly red seeds.


Soak 1 night and bring to a boil 2 minutes. Drain, and then cook over low heat 40 to 60 minutes in water with herbs and kombu seaweed.
