Undaria pinnatifida, marketed under the Asian name of Wakame, is kelp that has colonised our coasts. It is the third most important alga species in the world to be used as food.
When fresh, it is soft and has a particular aroma. Its delicate, slightly crunchy texture is very pleasing to the palate. Due to its special richness in glutamic acid, it greatly enhances the flavour of any food.
