Porphyra purpurea, otherwise known as noritake, is a very delicate blade seaweed, with red or violet-coloured tones and a lovely metallic sheen to its leaves.
Due to its intense sea flavour and exceptional nutritional qualities, it is the most highly consumed seaweed in the world. It is rich in protein, fibre, vitamins and minerals, including phosphorus, iron, vitamins A, B, C and niacin.
