Cardamom is frequently used in Indian food, cakes, creams, and it is delicious with cooked pears. This spice enhances the taste of savoury and sweet dishes and has a deep and camphorated scent. Its flavour is peppery, bitter and astringent. It is considered as a noble spice like saffron and vanilla. The cardamom is a wild plant, growing in the humid forests in the south of India and Sri-Lanka at an altitude between 750 and 1500 meters.
