The yuzu is a small citrus fruit of Japan. It has an acidity very marked and its taste is situated between the lime, the yellow grapefruit and the mandarin. We cannot consume it as it is because it is very acid and contains many pips but it is very appreciated in any kind of salty, sweet or spices sauces. Fallot chose this excellent and subtlety fruit to offers a delicious and originally product to the finest people.
The basis of this mustard is made by a Burgundy factory in Beaune, a mustard-maker since 1840. Seeds are selected for their qualities and are ground as in the past with millstones (flint). Millstones avoid damaging the heat-sensitive seeds and keep their flavours.
This yuzu mustard is perfect to put in your vinaigrettes, mayonnaises, fishes and also your poultry and your mixtures of vegetable. You can also associate it with raw vegetables salads or in sweet-salty food, with avocado or apples.
