A mushroom rich in iron ready to use
Rehydrate the mushrooms by soaking them in warm water for 15 minutes. Drain and plunge them into boiling water for 10 minutes. Rinse them in a colander. Cloud ear mushrooms can be cooked like fresh mushrooms: in a Provençal sauce, as a meat or game stuffing, or stirred into pasta, as a filling for vol-au-vents… For a delicious omelette, fry the rehydrated mushrooms for a few minutes before pouring the beaten eggs over.
