La Quiberonnaise only work with perfectly prepared, highest quality sardines. These sardines are aged for a year before being put on sale, to allow the fish to soak into the oil to perfection. The result is a gorgeously soft sardine without any scales or bones.
Did you know? Sardines improve with age as the oil in which they are canned soaks into their flesh. Like wine, really good sardines have their own vintage. If you are going to store them for a while before eating, you can ensure that they are kept in the very best condition by turning the tin over every six months or so.
