La Quiberonnaise cannery only work with perfectly cleaned, highest quality sardines. The sardines are aged for a year, so that they soak well in the oil, before being put on sale. The result is a gorgeously soft sardine (without any scales and bones).
Did you know ? Sardines improve with age as the oil in which they are canned soaks into their flesh. Like wines, really good sardines have their own vintage. If you are going to store them for a while before eating, you can ensure that they are kept in the very best conditions by turning the tin over every six months or so.
