Grey Mullet Boutargue (or Poutargue)
The treasure of the Mediterranean.
Boutargue (or poutargue – both words are used to describe this delicacy) are produced from the unopened egg sacs of the grey mullet. Simply salted, the result is a classically Mediterranean alternative to caviar. Delicious served on toast, it can also be used to make homemade taramasalata.
