Samphire is a small wild plant that grows on beaches and salt-pans. It is gathered by hand during early summer. Rich in mineral salts, it has a pleasant marine taste.
Tasting tip : rinse and drain samphire with cold water. Warm them up in a steam oven or in a pan with oil and butter. They can also be used to make some cold mixed salads.
