A beat citric acid content for this puree made from Japanese plum "umébosis" rich in protein, calcium, iron and phosphate.

This acid and salty puree will be used as a basis of a salad dressing. Ume plum is a well-known ingredient in Japan and in macrobiotic food for its various properties.

This is an alkalinizing food, eat in moderation.
