The Agen prune has recently been granted a Protected Geographical Indication (PGI) which imposes criteria of origin and production. The Agen prune can only be born from the drying of the prune d'Ente. The latter must not present any imperfections or risk being discarded. This pretty plum with a purplish colour is then dried and rehydrated (to 35% maximum humidity), this process will concentrate the flavours.
The little story of the prune
Coming from China via the Silk Road, the plum tree established itself throughout the Mediterranean basin under the impetus of the Greeks and Romans. Drying in the sun or in bread ovens is widely used, depending on the region, to make prunes.
The prune is a dried fruit with a high nutritional value, which can be preserved for a long time to meet the dietary needs of the bad seasons as well as for long journeys in caravans or on the sea. The prune has been known since ancient times for its nutritional, dietetic and medical virtues. It is recommended by Greek, Roman and Arab doctors.
