Rice in Japan is a basic food but also a tradition. It is used in many preparations such as sushi, because it becomes sticky when cooked, perfect for shaping both maki and nigiri.
Soak rice in cold water overnight. Heat 15 minutes without salting in a rice pressure-cooker. Then maintain temperature 20 min until all water is absorbed.
