Coming from warm-climate countries, ginger is known in Europe since the Middle-Age. Saint Hildegarde believed that ginger prevented from plague and sailors used it to avoid scurvy. It's a stimulant with a hot and peppery taste.
Tasting : in this recipe, ginger is finely cut in slices and cooked into boiling water before being crystallized. The root is really tender, slightly transparent and very tasty. Serve as a dessert or with a fruit salad.
