The rustic cheese from Aubrac.

In the past, Laguiole was made on the Aubrac highlands. Its quality is now guaranteed by an AOP label. It owes its name to Laguiole city in Aveyron which is also very famous for its knives.

Description : the laguiole has a thick brown rind and a firm pale-yellow paste. Its maturing process lasts from 4 to 12 months. It has a rustic taste that will remind you of the Aubrac highlands.

Tasting tip : to be tasted with a fruited red wine such a Cahors or a Burgundy.
