Samphire is a small wild plant that grows on beaches and salt-pans. It is gathered by hand during early summer. Rich in mineral salts, it has a pleasant marine taste.

Tasting : drain the glassworts. The glassworts in condiment can furnish mixed salads and accompany fish, cold meat and pork-butchery.

Samphire shoots, wine vinegar, water, sugar, salt, aromatics.
