Flours made with oragnic cereals

Our ambition is to propose you high quality flours with a great taste. To reach this goal, we only buy organic cereals coming mainly from Provence.

It is almost compulsory to have organic cereals to make whole flour. Indeed, to make whole flour, you use the whole cereal grains (the inside and the bran made enveloppe). This enveloppe has to be clean and safe. If you grow cereals with weed-killers or other harmful chemicals, you will finf these chemicals in the bran made enveloppe of the grains and thus later on in the flour what would be damaging for the customer.

That is why we only buy organic cereals. They are totally free of any chemicals.

Flours from different types...

Flours are classified according to their ash rate after burning. This rate corresponds to the ash weight remaining after the burning of 100g of flour in an oven heated at 900° Celsius for 6 hours.

T80 to T150 flours types correspond to brown to whole flour.

T45-T50 flours are used to make pastries, T50-T55 flours to make white bread, and T80-T150 flours to make brown or whole bread.
