Harvesting chick peas

First recipe : how to cook chick peas

Ingredients : 1 liter of water for every 200g of chick peas, garlic, laurel, thyme, savory, onion, cloves.

Dip the chick peas in water for 12h to 24h before cooking them. The more they stay in water, the faster they will be ready. Put some water in a saucepan and heat. Add some garlic, laurel, thyme, savory, onion and cloves to the water. Add the chick peas and cook them at medium heat for 1h. At the end of the cooking, take off the aromatics and drain off the chick peas.

You can taste the chick peas warm with a meat or a couscous. You can also taste them cold on salads.

Second recipe : chick peas cream

Ingredients : 250g of chick peas, 3/4 of a cup of sesame purée, 3/4 of a garlic clove, a cup of water, lemon juice, salt.

Cook the chick peas following the first recipe. Prepare then a fine chick peas purée with a food mill. In the same time, add some water to the sesame purée. Press some garlic to make a garlic purée. Now mix the sesame, garlic and chick peas purées in order to get an homogeneous cream.

This cream can be served with crude vegetables. It can also be spread on toasts to prepare appetizers.
