Corsican pigs bred free range

The breeding of Corsican pigs

Corsican pigs are bred free range for 18 to 24 months. They mainly eat cereals (about 80%), mast and chestnuts. It gives to their meat a special taste.

Prisuttu : golden medal to the Prunelli trade fair

I got the gold medal for my prisuttu (dry Corsican ham) during the Prunelli trade fair. I am really proud of it.

It takes more than 18 months to make a good prisuttu. The first step is the salting. Then you have to check regularly the maturing process of the prisuttu. It mustnot go too fast. A good prisuttu must have a nice red salmon-pink color and 1 inch large fat strip, and a hazelnut flavor.

How to prepare a good prisuttu ?

The making of a good "Prisuttu" requires to respect a certain number of rules in accordance with the traditional recipe. The drying of the prisuttu must be done at least at 2400 feet up. The quality of the meat is also essential. And then, the way it is sliced is also important to better appreciate its taste...
