The Hypocras

Appreciated in the Middle-Ages, it was served at the court feasts, and one admired then the challenge of marrying the strenght of the wine to the sweetness of the honey and to the spicy flavours. The Hypocras des Pays d’Oc is elaborated traditionnally, respectful to ancient techniques. It is obtained through a cold maceration.
The product obtained is then filtered after decantation, in order to get a clear and bright drink. The Hypocras is best served chilled, as a drink. But the red Hypocras is also a perfect match to chocolate desserts and the white to apple and peer pies.

La Saugée

According to an old recipe from a cooking book of the XIV century (de Modi Preparandi et Condienti Omnia Cibaria) La Saugée des pays d’Oc is ideal to stimulate appetite, and as a dessert wine. A lemon and cardamom note enhances the delicate perfume of the sage in a slighly sweet wine, with honey flavours. Before the dicovery of spices, plants and fruits were often used to flavour wines. La Saugée was with the Hypocras one of the most consumed drinks in the Middle-Ages. Rediscovered for you today, it will be appealing to you.
