A family story
 
The story begins with my great-grandfather Giovanni Polito, Italian of course, who settled in Sete (South of France) at the end of the 19th century. In the Polito family in Naples, we were pasta makers for years and Giovanni decided to launch a pasta business in Sete and opened a shop in the Peyriere district. It worked pretty well. My grand-father Claude and my father Jean succeeded to him. In the fifties, my aunt Lisette Polito married with Georges Azais, a famous wholesale fishmonger from Sete, who created the Sete fish auction market in1955.

Jean Polito and Georges Azais soon exchanged their views and own experiences and this eventually led to the creation of the first fish soup canning factory in Sete (in 1963). And that was a real success. From that time, we have been continuing to develop new typical recipes from Sete and from the Mediterranean coast : the rouille a la Setoise sauce, setoise-stuffed squids, and mussels (a recipe coming from my grand-mother Finette Polito)... In 2003, we celebrated the 40 years of the factory but we are still very excited to find and create new recipes. We are currently very proud of our last recipe ; the whelks in court- bouillon.
