The sardine in box is a quality issue,

The sardine is a fragile fish that has to be packed quickly after having been fished. It is always the same method : the head and the tail are cut. The evisceration process must be perfect and there must be no blood on fishbones. In La Quiberonnaise, we particularly present the sardine so that when we open the box it is the fragilier and whiter side which is presented. It is another garantie proof of the quality of the product.

Then it is important to know that for oil sardines like good wines, ageing improve the flavour of a tinned product. It takes about a year for the sardines to be completely impregnated by the oil. Then they are ready to be enjoyed. This is what we offer our customers, and we call it "Millésime de l"Année". However it is important to turn up the sardine boxes every 5 or 6 months to better preserve them and so that all the flesh soaks in the oil. Sardines can thus be conserved during several years. It is also the reason why we only sell our sardines one year after they have been fished and packed.
