Pickled grapes

Appetizers

Ingredients (6 persons) : 2 jars of pickled grapes in vinegar (21cl), die-shape pieces of emmental (200g), appetizers pikes.

Preparation : on each pike, spit a piece of emmental and a grape. Easy to prepare and tasty !


Nettles quiche

First plate : a wild nettle quiche

Ingredients (6 persons) : 2 pots of wild nettles (21cl), flour (150g), butter (75g), 3 eggs, crème fraîche 10cl, milk 20cl, garlic, salt, pepper.

Preparation : prepare a short pastry with the 150g of flour and the 75g of butter, a pinch of salt and half a glass of water. spread the pastry in a buttered mould. Meanwhile strain off the nettles and cut them finely. Mix them with the 2 glasses of milk, the crème fraîche, and verse this preparation on the pastry. Cook in a owen for at least 25mn.


Foie gras

Our main dish :
Fresh foie gras cooked with Périgord Verjus

Ingredients (6 persons) : 1 Périgord Verjus (32cl), 2 jars of pickled grapes in vinegar (21cl), 1 fresh duck foie gras (450 to 500g).

Preparation (10 mn) : cut 6 slices of foie gras. Cook them in a thick saucepan for 3 to 5mn. Keep them warm. Meanwhile, in the saucepan where there is stillsome melted duck fat, add the grapes (without the vinegar). Cook them at medium heat for a few minuts and add 10cl of the Perigord Verjus. You now have a nice sauce that you can verse on the slices of cooked foie gras. Serve and enjoy !
