Sweet pepper jam

<p><b> Rabbit sauté with its sweet pepper jam sauce</b> </p>
<p>In a sauce pan, brown the rabbit pieces in <a href='/2F169_Pure_Olive_Oil_From_Baux_Provence_Valley.html'>olive oil</a>. Add some pepper, salt and herbs from Provence. Add some white wine. Cook at low heat during 40 minutes. Take out the pieces of rabbit, keep them warm.  Reduce slowly the sauce, add 2 spoons of<a href='/2F666_Red_Sweet_Pepper_Jam.html'>sweet pepper jam</a>, add the same quantity of crème fraîche.  Cover the pieces of rabbit with this sauce and serve warm with boiled potatoes. </p>

Cook the leg of lamb.
5 minutes before the end of the cooking, cover it with 1 or 2 spoons of thyme jam, and finish the cooking. You will get a finely thyme flavored dish. The sugar of the jam will also form a tasty burn out sugar crust.
