All the family participate to the collecting of rose petals. It takes place at the end of August and the beginning of September. Rosa gallica are also called "rose from Damascus". It is a five petals rose that looks like a wild rose.

Only the petals are collected, then spread out, sorted, washed, bleached, and crystallized in sugar.

Theses crystallized rose petals are then used when necessary for the making of rose-flavored candies, barley sugar, lollypops...

Our recipes are well kept family secrets. I can only tell you that rose jam is prepared in a copper cauldron, and cooked at a temperature higher than 100°C.

And the result is great. In a blind jam contest organised by Fauchon, one of the best gourmet shop in Paris, our rose petal jam was ranked first !
