Dominique Gaufillier, confiseur à Provins

A recipe dating from the XIIIth century

In 1238, returning from Crusades, Thibault the IVth the singer, Lord of Brie and of Champagne, brought from the Holy Land the red rose which has since been perpetuated in Provins.

For a long time, Provins made a great business of this splendid scented wild rose, which was cultivated for the double purpose of its beauty and of its medicinal virtues. This rose quickly ensured the fame of Provins.

In the form of dry or liquid preserves, this precious product obtained from the "Rosa Gallica" were quickly very demanded on all the significant fairs of the Middle Age, not only regionally, but also in Europe and particularly in the Middle-East.

Chaudron

A jam for Kings

Philippe de Marigny, Archevêque of Sens, received the first in 1330, as a gift of welcome in Provins, a rose jam pot.

The same gift was made later on to Charles the VIIth and to Jeanne d'Arc in 1429, to François the 1st in 1529, to Henri the IInd in 1556, to Catherine de Médicis in 1574, to Henri the IVth in 1592 and to Louis the XIVth in 1650.

Charles the Xth is the last sovereign who received this noble gift in 1828.

Confit de pétales de rose

A living tradition

Today, I perpetuate this tradition in Provins. Discover and order online my rose-flavored products.

The rose-petal jams were first searched for their medicinal properties. Nowadays, they are especially appreciated for their fineness and their flavor.
