Dominique Gaufillier is a pastrycook and confectioner and a specialist of rose-based products (rose jam, rose candies, barley sugar). Since 9 years, the Gaufillier house is in the heart of Provins, the city of the rose since the Middle Ages.

I perpetuate a many centuries old tradition that was initiated by Thibault IV the singer, Lord of Brie and of Champagne, when he came back from crusades in 1236.
