Salad dressings

Fresh : with white cream cheese or yoghourt, lemon and Espelette red pepper mash.
Walnut : walnut oil, xérès vinegar, green walnuts and Espelette red pepper mash.

Marmitako

600g of red tuna cut in dices / 600g of potatoes / 3 sliced up onions / 1 clove of garlic / 12 mild peppers / 0.75l of white wine / 0.3l of water / salt, spices.

Cook the onions finely sliced up and a crushed clove of garlic. Add the white wine and wait until it has boiled down by half.
 
Cut the mild peppers in pieces after having cut the stalks and add them. Cut peeled potatoes in cubes and them to the mix with water. Add some Espelette red pepper powder or mash, some salt and spices. Cook the potatoes. Add the red tuna, cover and let simmer for about 30 minutes.

Nora

Espelette red pepper mash, avocado and fresh goat cheese.
Serve on toasts.
