A unique region !
Green lentils from Le Puy are cultivated on the high plains of Velay, in the south of the Auvergne region. They suffer from the cold at the beginning of their growth (cultivated until 1100 meters of altitude), then benefit from an exceptional sun exposition that speeds up their ripeness. Those different elements give lentils a fine and tender taste, a non-floury almond and a thin skin that please several Chiefs and also a lot of consumers.

Harvest
Lentils are gathered in the hours following the harvest. Immediately after several analysis of quality and humidity, lentils are pre-washed : elimination of foreign seeds, ripe seeds, pebbles and soil amalgams...
