Dry sausage - the Cousin's Portion
A family tradition on the verge of extinction
When a pig was slaughtered, it was traditional to portion up the body in order to prepare various preserves and cuts. Friends, neighbours and family members would lend a hand, and their payment was frequently in the form of a share of some of the meat.
The Cousin's Portion is a sausage made from the lesser valued portions of the beast, including the heart and lungs of the pig
This tradition has now almost disappeared in France and only a few delis continue to prepare the Cousin's Portion sausage. We are therefore very proud to be able to offer you a real taste of old France.
