A sauce commonly used in the Middle Ages
Verjuice is a juice made from any grapes that remain unripened at harvesting time. Use as an alternative to vinegar or to deglaze the pan to create a richly flavoured sauce. We love it as the basis for a simple sauce for pan-fried foie gras.
Composition : Burgundy green grape juice, preservative : sulphur dioxide
