Demelin produces jams in the Ardennes region of France, using the sort of recipes that you might find carefully transcribed in your grandmother's recipe book.
A fruit cheese, or jelly, is much the same as a jam, but smoother, without any of the annoying little pips and bits that stick in your teeth! Delicous on toast or scones.
