Richly flavoured courgette jam

Madame Felix makes her collection of delicious chutneys, jams and syrups very near to the home of BienManger in the beautiful Lozère region of southern France. She doesn't use any artificial colourings, flavourings or preservatives, and her recipes are almost as simple and straighforward as it is possible to imagine.

This richly flavoured jam is made with sun-ripened courgettes. We recommend it with traditional French dried sausage, or as a dip for raw vegetables.

Composition : Courgettes 54%, sugar 46%, cloves, ginger, lemon, gelling agent: agar agar
