A natural alternative to cocoa
The carob tree grows well in a mediterranean climate, and produces both carob gum and carob powder. Carob gum is much sought after for its soothing properties, whilst teh powder is used as a natural replacement for cocoa.
Carob powder can be used in any recipe where you would usually use cocoa powder. It is richly flavoured and extremely versatile.
