Sichuan pepper is produced in China and Japan. Otherwise known as "fagara", the peppercorns appear red at first before turning rich brown, and finally separating into two halves that reveal tiny black seeds.
Extremely aromatic and much sought after for its slightly lemony, woody flavour, Sichuan pepper brings out the flavour of white meat, fish and foie gras, and can also be used to add perfume to chocolate mousse and custard.
