A richly flavoured spice perfect in puddings
The tonka bean originates from the Caribbean and South America. In its raw form, the bean has a strong, bitter flavour, but after maturation, the flavour mellows to a rich, vanilla-like savour, with notes of sun-dried grasses, honey and caramel. Delicious added to puddings, custards and cakes. Grate or grind before using to release the flavour.
