King Louis XIIIth's Court was infatuated with this exquisite candy, created by Marechal Duc de Praslin's officier de bouche. The Praline is a specialty of Mazet de Montargis's confectioner and the recipe has been kept secret ever since. The full flavor of the grilled, caramelized almonds is released when you bite into the crunchy brown sugar.
