Himanthalia elongata are algae that contain lots of vitamin C (five times more than an orange!). They are also rich in fibre, iron, and potassium. The sea bean, with its very fine and tender texture, marries perfectly with the wine vinegar, which is flavoured with raspberry to give a slightly sweet, salted and very original flavour.
