Sweetly scented violet jam

Those of you with a weakness for violets will adore this delicious jam, with its intense yet delicate aromas of flowers and its slightly acidic, floral flavours. This jam is as good used in baking as it is simply spread on toast for breakfast. Why not use it on pancakes, or as an ingredient in sweet-and-sour sauces?

Composition : Cane sugar, water, lemon juice, violet, flavouring, gelling agent: agar agar, natural colouring agent: anthocyanins. Sugar: 60g per 100g.
