Les Huiles Guénard recipe: Chocolate foam in hazelnut oil
- 4 eggs
- 50g of sugar
- 200g of chocolate
- 2 soup spoons of hazelnuts Guénard Oil
Split the yellow of the white to your eggs. In a bowl, clear the yellow with the sugar.
Melt the chocolate in a water bath with the hazelnut oil. In a second bowl, add sugar and eggs to this mixture. In another bowl, whisk the white eggs and incorporate them delicately into the preparation.
Let rest at the cool for at least 2 hours.
